Bruschetta

One of my summer favorites is bruschetta. Fast and easy to prepare although I think it’s best to let it marinate for at least an hour before serving.
Here is a list of the ingredients you’ll need to get started:
- Tomatoes
- Red Onion
- Garlic
- Basil
- Parsley
- Olive Oil
- Balsamic Vinegar
- Red Wine Vinegar
- Fresh loaf of rustic Italian bread
Instructions and Full Ingredients
Put 4 chopped tomatoes (about 1 lb), 1/2 red onion and 2 cloves of minced garlic in mixing bowl.

Add in 1/8 cup of fresh basil, 2 T of fresh parsley, 1/8 cup of olive oil, 4 t of balsamic vinegar, 1 T red wine vinegar. Add salt and pepper to your taste. Set aside and allow to marinate.

Lightly brush your bread with olive oil and toast. I prefer an artisan loaf or bagette and rather than using a toaster I use our grill. The toaster works as well but for some reason the grill seems to make it taste so much better.

Once bread is browned on both sides it is ready for the yummy topping.

Makes a wonderful appetizer or side dish.

The food looks amazing! Especially those fresh tomatoes being sliced up. Brushcetta is awesome!
